Football season is in full swing, and that means: FOOD!
You know I love my Philadelphia Eagles and family gatherings, but my New England family isn’t so keen on my team choice. Because of that, I have to be gracious with my food. You know that I am on a journey of health, so I am always looking for the best ways to serve the most delicious foods in the most good-for-you manner. This includes my new fave: Healthier Jalapeños Poppers!
With just a few different ingredients than you may be used to, these delicious jalapeños poppers are a lighter, less dense version of your favorite Fall football game snack!
- 4oz Lowfat cottage cheese pureed until smooth
- ½c. shredded cheddar cheese
- 2T salsa
- 1½t ground cumin
- ¼t salt
- 1c finely shredded cooked chicken
- 12 medium jalapeños, halved and seeded
- 1½t paprika
- Preheat oven to 400 degrees. Line a baking sheet with foil.
- In a medium bowl, beat together cottage cheese, cheddar cheese, salsa, cumin and salt.
- Stir in chicken.
- Spoon about 1 tablespoon of the mix into each jalapeño half and place on prepared baking sheet.
- If desired, sprinkle with paprika.
- Bake about 20 minutes or until golden brown.

Serve
I always serve my poppers with some nice brown rice to give a nice balance- something with a lime or other citrus taste, keeps the poppers fresh and light. What’s your favorite football season snack?
