We all know that the weeks are busy. For everyone.
Whether you have kids, pets, a job, class. It gets out of hand. Things happen all the time. ALL the time. We try to hold on for dear life, but I find, more often than not, that I’ve got no choice but to let go of the spinning merry-go-round with one hand. Often, this leaves dinner plans as a fury of grabbing, slicing, seasoning and wondering what will bring it all together. When the opportunity came through (as an Influenster) to share Annie’s Homegrown frozen family meals, I jumped at the chance. Not just for you. Mostly for me. A night of food that I set and forget? YES PLEASE!
When I picked up the small box at my local Target, I was worried. It was small. Would there be enough for my hungry family of three? I tossed the meal in the oven (you can use the microwave, too!) and some asparagus in a pan and that was it. Dinner was done… except for plating.
As I pulled the pasta dish out of the oven, I was overwhelmed with the delicious smell of sauce and cheese (a family favorite around here). Addie rubbed her little belly and cried for “dinnah”. I felt the same way. I placed the dish on the stove to cut with my spatula, making sure to cut generous pieces.
And there was a whole serving left!
We ate our dinner, and I was sure someone would go back for seconds, but my crew of two looked at me with the most satisfied grins and dismissed themselves for some story time (leaving me to clean up!). While Dave and Addie read in her bedroom, I packaged up the leftovers for Dave’s lunch, rinsed the pan I’d used under the lasagna in the oven, washed the pan from the asparagus and three plates. That was it.

That looks delicious! Avery can’t eat it because of the tomatoes, but it’s a perfect meal for Dave and I on those nights when Avery demands only “ronis and cheese!!” Haha
