For me, getting dinner on the table is a task that starts on Sunday, no matter what day of the week it is. …which is funny because we eat dinner at my in-laws’ on Sundays. I start with my coupons, recipe books, weather prediction for the week and what’s left in the fridge and freezer. Once I’m armed with these things, planning begins.
I like to peruse my local Stop & Shop for ideas, too, which is where I found Veggie Fries last week! I decided that I would grill for us on the next nice night… but for us, grilling is a sport. It’s a race against getting the charcoal going, Dave getting home from work on time, eating at a decent hour, and still making a well-balanced meal everyone will not just eat, but enjoy. No, I do not and will not ever cook different meals for the kids- unless they’re sick.

Due to the insane amount of time it can take me to get the grill started (I LOVE charcoal grills, but they are not mom-with-two-kids-and-no-help friendly), I’m often left to toss on whatever we have for extras, or resort to a side salad for some vegetables… until I started becoming obsessed with making my own fries. This is an awesome thing to do to make vegetables more appealing- I’ve even cut off the tops of broccoli (which to a child can taste like hair… or so Addie has told me)- to make veggie fries. But with little time to create the best burgers ever, peeling, slicing, seasoning then baking my different vegetable fries took us into 8pm! We are a late family as it is, 8 is just too late for a weeknight.
So… what’s the perfect weeknight, grill meal for the ‘Tinks?
Our best burger includes: ketchup, mayo, cheese, just warmed on the grill onion and mushrooms. On the side we have corn on the cob, and my favorite parent cheat- Veggie Fries! With burgers, I often go with the broccoli Veggie Fries, but we do love the carrot, too! (Millie LOVED them most of all!)
Putting the best meals on the table is never easy- especially with toddlers, but having a go-to vegetable staple, a delicious meal from the grill isn’t half as hard as it used to be! Veggie fries are non-GMO, gluten, dairy, soy, peanut, egg and tree nut free, as well as vegan- seriously the best thing in the frozen food aisle! Addie, Millie, Dave and myself- all love our veggies, especially as fries with our burgers!

Mmmmm…burgers and fries. Now that sounds like dinner. I wish we could have a gas or charcoal grill, but we live in an apartment. We use a stove top grill, but it actually does a pretty good job.

These look like a fantastic alternative for my grandchildren! All 5 of them love regular potato fries but being able to give them carrots or broccoli instead would be much preferred! Especially if they didn’t even know…hehe. 🙂

I love the veggie fries! We are getting a grill in a couple of weeks, so this would be great to have as a side to go with our burgers and hot dogs.
